Once you have completed these stages, watch a six-part video demonstration which offers a guide to carving at guéridon in front of customers. The masterclass then guides you to perform the tasks shown in the videos and offers a set of downloadable resources to assist you in your practice.
Suitable for Level three (Level six in Scotland) learners, this masterclass takes around two hours to complete. You are required to successfully answer a series of multiple choice questions at the end of your learning before being awarded a downloadable WorldSkills UK certificate.

list equipment required for the mise-en-place on the gueridon
identify the appropriate equipment required for carving
identify the various cuts of chicken
display the technical skills to carve the roast chicken for four portions
clear used equipment and debris after carving
apply the health and safety requirements
