This page details the WorldSkills Occupational Standards (WSOS), specifying the knowledge, understanding, and skills that underpin international best practices in technical and vocational performance. These standards embody a shared global perspective on the work roles and occupations they represent in industry and business, supporting the preparation of students and apprentices for international competitions.

To assist educators in further and higher technical education, we have developed a suite of WorldSkills UK National Standards of Excellence, designed to bridge the gap between UK and international standards.

What does competence look like in this area? 

  • serve food professionally and efficiently for different styles of service: plated service and silver service  
  • prepare, portion and serve classical specialist dishes from the gueridon 
  • serve food professionally and efficiently for a range of meals including breakfast, lunch, afternoon tea, dinner, casual, A la carte, bar, fine dining and banqueting service 
  • communication and self-management skills 
  • apply health and safety practices in carrying out tasks. 

What does excellence look like in this area?  

  • serve food professionally and efficiently for different styles of service: Gueridon service involving cooking, filleting and carving techniques 
  • create own flambee dishes, meat or fish or dessert using ingredients from the mystery basket, (seasonal and locally sourced food), displaying theatrical skills to guests 
  • provide high quality restaurant service irrespective of type of meals at all times 
  • uniform, personal presentation, posture, deportment, communication, social skills and technical service skills.

What does competence look like in this area? 

  • preparation and service of various alcoholic and non-alcoholic drinks  
  • develop sensory skills to differentiate between various alcoholic beverages  
  • apply sensory skills in differentiating between various alcoholic beverages 
  • healthy and safe working practices 
  • memory skills, use of sustainable products 
  • reducing wastage and recycling of bioproducts  
  • effective and efficient working relationship with colleagues 
  • good customer service at all times . 

What does excellence look like in this area?  

  • preparation and service of classical cocktails according to IBA recipes and signature cocktails (alcoholic and non-alcoholic) 
  • organoleptic testing of aperitifs, spirits and liqueurs 
  • identify a range of aperitifs, spirits and liqueurs from appearance and aroma 
  • preparation and service of various alcoholic and non-alcoholic drinks 
  • correct glassware 
  • correct recipe 
  • served within specified time 
  • consistent levels and no drips.
